A simple but communal meal!




Core bought a serving set for sake -- a delicate Japanese alcoholic drink, meant to be sipped (and thoroughly enjoyed).




And the last of the peppers (even though I do not like them) from Steve's garden!

Phyllo Mushroom Tartlets


Tonight I had the urge to go to my favorite Irish pub and not debate about dinner. Due to my prodding boyfriend and my terrible guilt-inducing personality, though, I determined to make mushroom tartlets instead. I have been dealing with a mushroom obsession of late; so this appealed to me more than slightly.

But!

When I perused the refrigerator, I realized that a package of puff pastry dough has been sitting there, unused and neglected, for nearly weeks. I have never been one to love the texture of phyllo, but I decided to substitute that for my basic flour-plus-water-&-spices dough concoction.

It looked far more like paper than I could have imagined. When I opened it I thought perhaps the world was playing a practical joke on me --




So!

This began with some saute-ing of olive oil, onions, and basil. Then I added a lil' red wine and a ton of chopped mushrooms. That brewed for a while while I spread almost a stick of butter on a sheet o' the flabbergasting phyllo dough.




And after digging in --


As a side note, here is what Bean made alongside me for the night; stuffed peppers. He spent a long while brewing up some delectable risotto with Italian cheese, and spinach. Then stuffed it into peppers and baked it simultaneously with mine. It looked good except that I absolutely cannot stand any smell or taste of peppers!

(Kind of) Burritos


Was hungry hungry today because my class got out at 10 PM. Since, however, I had this avocado to use up, I had to be patient with the meal, but it was pleasing as ever to concoct alone in the kitchen -- it never ceases to be relaxing.

So!

This made two tiny burritos. I mashed up all of these ingredients in a bowl:

1/4 avocado
1/4 c. pinto beans (mashed)
1/2 c. white rice
scoop of salsa
red pepper flakes
garlic
salt

I also had pita pockets in the fridge, so I carefully sliced one in half (which turned out to the most difficult part of the meal) and wrapped the burritos in them. Then I fried them in a pan with Simon's leftover fried egg butter and some cooking spray. They were hot and GOOD.

Thai Try

Simon has been suggesting we attempt to make something Thai like for weeks now, so today we went to the store and bought tons of fresh vegetables and some basil leaves and chicken and went to town.

We started by sautéing some:
olive oil
garlic
basil leaves
red pepper
scallions

and then added
diced chicken breast
broccoli
asparagus
soy sauce
red pepper flakes


and side by side we steamed
spinach
broccoli
tomatoes

And then, finally, we added rice to the mix and proceeded to place it inside of us.
